Matt and I cruised to the store yesterday and loaded up on tons of fresh fruits and veggies!
So today's lunch consists of a yummy smoothie and chicken salad!
I added some blueberry Greek yogurt, two carrots, a 1/3 of a large cucumber, one banana, one large handful fresh blueberries, 1/2 cup frozen mixed berries, one large beet, 3 mint leaves, a 1/2 cup frozen mango and two massive handfuls of fresh spinach...it is very delicious. The beet is a little strong, I may go with a 1/2 beet or smaller beet next smoothie.
*I also added a little water to help it blend well
Also, this kid has been an eating machine the last two days- peppers, sweet potatoes, bacon, blue berries, yogurt and smoothies. This is a miracle considering he usually one likes carbs and peanut butter sandwiches...and of course ketchup! Victory for a day.
